Apricot
& Date Chutney

Ingredients:
• Dried apricots - 500g
• Sultanas - 1 1/2 cups
• White wine vinegar - 1 1/2 cups
• Brown Sugar - 1 3/4 cups
• Chopped Dates - 250g
• Preserved ginger chopped - 1/3 cups
• Water - 1 cup
• Salt - 1 tbsp.
• Mustard seeds 1 1/2 tsp.
• Chili powder - 1 1/2 tsp.
Method:
Cover apricots with water & leave to soak 1 hour,
then drain. Place in a pan with the sultanas & vinegar,
bring slowly to the boil & simmer for 15min. Stir
in the remaining ingredients & simmer until thickened.
Pour into hot sterilized jars & seal then label.
